  • Food Processor
  • Small Ice Cream Scoop
  • Baking Sheet
  • Parchment Paper

Ingredients

  • 20 pitted dates
  • ½ cup water
  • 1 cup walnuts, chopped
  • 1 cup shredded unsweetened coconut
  • ¼ cup chia seeds
  • ¼ cup cocoa powder
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup chocolate chips

Directions

  1. Combine ingredients

    Place all ingredients in the bowl of a food processor and pulse until well combined.

  2. Scoop and roll

    Scoop with a small ice cream scoop, roll, and place on baking sheet lined with wax paper. (You should get approximately 20 energy bites)

  3. Refrigerate

    Place in refrigerator for 1 hour to firm up.

  4. Serve

    Serve immediately or keep refrigerated or frozen in airtight container.
