Black Bean Brownies

Ingredients

  • 4 tablespoons cocoa powder
  • 1 cup old fashioned rolled oats
  • ¼ teaspoon Kosher salt
  • ½ teaspoon baking powder
  • 2 (15oz.) cans black beans, drained and rinsed
  • ½ cup pure maple syrup
  • ¼ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup chocolate chips
  • Butter or cooking spray to grease baking dish
  • 2 tablespoons black coffee (optional)

Directions

  1. Preheat oven

    Preheat oven to 350º.

  2. Combine dry ingredients

    Add cocoa powder, oats, salt, and baking powder to the food processor bowl.

  3. Blend dry ingredients

    Pulse and blend until the mixture resembles a flour-like consistency.

  4. Add in liquid ingredients

    Add in black beans, maple syrup, oil, and vanilla—as well as coffee, if you're using it. Blend until it’s completely smooth.

  5. Stir in chocolate chips

    Remove the bowl from the food processor and, using a rubber spatula, stir in the chocolate chips.

  6. Transfer to baking dish, and bake

    Pour mixture into a greased 8×8” baking dish, and bake for 18–20 minutes.

  7. Cool for up to 30 minutes

    Let cool 20–30 minutes before cutting so the brownies are able to firm up.

  8. Cut and serve

    Cut into 2x2 inch squares for 16 brownies. Serve and enjoy!
