Strawberry Shortcake Overnight Oats

  • 12 fresh strawberries, cut into bite-size pieces
  • 2 cups rolled oats
  • 1 ½ cups unsweetened almond milk
  • ½ cup nonfat Greek or nonfat plain yogurt
  • 1 tablespoon strawberry jam
  • ¼ teaspoon vanilla extract
  • Zest of 1 Lemon, Optional
  • Optional for topping: fresh cut strawberries, granola, chopped nuts


  1. Mix ingredients

    In a large mixing bowl stir together oats, milk, yogurt, jam, and vanilla until fully combined.

  2. Add berries and refrigerate

    Add strawberries, and gently fold in to oat mixture using a rubber spatula. Cover and refrigerate for at least 2 hours or overnight.

  3. Distribute oat mixture

    Evenly distribute oat mixture into 4 serving bowls.

  4. Add toppings

    Add your favorite toppings.

  5. Reheat and enjoy

    Enjoy them cold or warmed up for 30 seconds in the microwave.
