Peanut Butter Cookies

Ingredients
- 1 cup smooth peanut butter
- ¾ cup brown sugar, packed
- ½ teaspoon baking soda
- Pinch of salt
- 1 large egg
- 1 teaspoon vanilla extract
Directions

Preheat oven
Preheat oven to 350º.

Mix dry ingredients together
Add peanut butter, sugar, baking soda, and salt to a medium-sized mixing bowl. Using an electric mixer, beat the dry ingredients together on medium until well blended.

Add liquid ingredients
Add the egg and vanilla to the mixture and blend on low speed until fully incorporated.

Prep baking sheets
Line two baking sheets with parchment paper.

Scoop cookies onto sheets
Using a tablespoon, measure cookie scoops. Scoop six cookies onto each baking sheet. With the back of a spoon, gently press the top of the dough to flatten slightly.

Bake cookies
Bake the cookies for 8–10 minutes.

Remove and cool
Remove cookies from the oven, and cool on a cooling rack.*

Repeat with remaining dough
Repeat steps 5–7 with any remaining batter.
