Ingredients

  • 1 (15oz) can low-sodium black beans, drained and rinsed
  • ½ red bell pepper, diced
  • ½ onion, diced
  • ½ cup shredded cheddar cheese
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Kosher salt and pepper to taste
  • ⅛ teaspoon cayenne pepper
  • 1 large egg, beaten
  • ¾ cup breadcrumbs
  • ¼ cup grape seed oil

Directions

  1. Preheat oven

    Preheat oven to 375º.

  2. Mash

    Place beans in a large mixing bowl and, using a potato masher, mash the beans until they're almost a paste.

  3. Add remaining ingredients

    Add in all remaining ingredients except grape seed oil and mix well.

  4. Shape into patties

    Shape into six individual patties and brush patties with grape seed oil on both sides.

  5. Arrange patties

    Line a baking sheet with aluminum foil and arrange patties in a single layer.

  6. Bake

    Bake in the oven for 12–15 minutes or until patties firm up.

  7. Serve

    Serve on in a whole-wheat pita or on a whole-wheat bun with your favorite condiments.
