Zucchini Nachos

Ingredients
- 3 large zucchinis, sliced into ½" rounds
- ¼ cup vegetable oil
- Kosher salt
- Freshly ground black pepper
- ½ onion, diced
- ½ pepper, roughly chopped
- 1 lb. ground beef, chicken, or turkey
- ½ teaspoon cumin
- ¼ teaspoon chili powder
- 1 cup shredded cheddar cheese
- 1 avocado, cubed
- 1 large tomato, diced
- 1 jalapeño, sliced
Directions

Preheat Oven
Preheat oven to 400°.

Bake Zucchini
Place sliced zucchini on a large baking sheet in a single layer. Toss with 2 tablespoons of oil, salt, and pepper. Bake in oven until tender, about 5 minutes.

Cook Onion and Pepper
Meanwhile, place a sauté pan over medium heat, add 2 tablespoons of oil. Once oil is hot, add onion and pepper and cook until they begin to soften. Season with salt and pepper.

Cook Ground Beef
Place ground beef (or meat of your choice) in pan with pepper and onions, season with cumin and chili powder and cook until beef is cooked through and no longer pink.

Set Up Broiler
Remove zucchini from oven and turn your broiler on high.

Top Zucchini
Top zucchini with beef mixture and cheese. Place back in the oven and bake until cheese is melted.

Remove from Oven
After removing from the oven, top zucchini nachos with avocado, diced tomatoes, and jalapeños.
