Rigatoni Carbonara with Turkey Sausage
Tools You'll Need
- Measuring cups
- Measuring spoons
- Large pot
- Large frying pan
- Wooden spoon
- 1 tablespoon olive oil ½ lb. turkey sausage
- 3 egg yolks, at room temperature
- ¾ cup freshly grated pecorino or parmesan cheese
- 8oz. (½ lb.) whole wheat Rigatoni pasta
- Salt for water
- Freshly ground black pepper to taste
Bring water to a boil
Bring a large pot of salted water to a boil.
Heat up oil
Heat the oil in a large frying pan.
Sauté the sausage
Add the sausage to the frying pan and cook on medium heat until it’s cooked through.
Once the water has come to a boil, add pasta and cook according to the package instructions.
Whisk eggs and cheese
In a small bowl, whisk egg yolks with cheese and set aside.
Reserve about a half cup of pasta water and drain the pasta.
Add pasta to sausage
Add the pasta noodles and a splash of the water to the sausage, and mix well.
Combine all ingredients
Remove the pan from the heat, and stir in the egg mixture using a wooden spoon, adding more pasta water to thin out the sauce if needed.
Garnish and serve
Top it with some freshly grated cheese and a pinch of freshly ground black pepper. Serve immediately!
