Peanut Butter and Chocolate Chip Energy Bars

Ingredients
- ½ tsp vegetable oil or cooking spray
- 1 cup quick-cooking rolled oats
- 1 cup unsalted peanuts
- ½ cup natural peanut butter
- ¼ cup sunflower seeds, unsalted and shells removed
- ¼ cup pumpkin seeds, unsalted and shells removed
- 20 pitted dates
- 2 eggs
- Small pinch of sea salt
- 1 teaspoon vanilla
- ½ cup dark chocolate chips
Directions

Preheat oven
Preheat the oven to 350°.

Grease baking dish
Lightly grease a 9x9 baking dish with oil or cooking spray and line the bottom with parchment paper.

Chop
Place the oats, peanuts, peanut butter, sunflower seeds, and dates in the bowl of a food processor and pulse until finely chopped.

Pulse ingredients into paste
Add eggs, salt, and vanilla. Pulse until it becomes a coarse chunky paste.

Add chocolate chips
Place mixture into a mixing bowl and add chocolate chips.

Mix
Using a wooden spoon or lightly floured hands, mix in the chips.

Transfer to baking pan
Transfer the mixture to the prepared baking pan and spread evenly, use your hands or the back of spoon to gently press down to an even layer.

Bake
Bake for 35 minutes, or until firm and golden.

Cool and cut
Cool and cut into nine bars.

Store
The bars can be stored in an airtight container for a week in the refrigerator or a month in the freezer.
