Nut Butter Protein Bars

- Measuring Cups
- Measuring Spoons
- Medium Mixing bowl
- Wooden spoon
- Rubber spatula
- Double boiler
- 8x4 loaf pan
- Parchment paper
Ingredients
- ¾ cup natural creamy peanut butter*
- ¼ cup honey
- 1 tablespoon vegetable oil
- 1 teaspoon pure vanilla extract
- ⅓ cup ground flaxseed or flax meal (optional)
- ½ cup pea protein powder*
- 3 oz. dark chocolate
Directions

Combine wet ingredients
In a medium bowl combine peanut butter, honey, vegetable oil, and vanilla together until smooth.

Add dry ingredients
Add in ground flaxseed and protein powder.

Mix
Use a wooden spoon to mix everything together until dough becomes hard to work. Continue mixing together with clean dry hands until all ingredients are thoroughly combined. The batter should be similar to cookie dough.

Line pan with parchment paper
Line an 8x4 inch loaf pan with parchment paper.

Press dough
Press the dough into the lined loaf pan and using your fingers press into an even layer.

Heat water
Heat approximately 1 inch of water in a double boiler* over medium heat.

Metl chocolate
Place chocolate in top half of double boiler and allow chocolate to melt slowly.

Stir
Remove from heat and stir until smooth.

Pour chocolate
Pour the melted chocolate over the peanut butter layer and tilt the pan so that the chocolate covers the peanut butter layer entirely. You can use a small rubber spatula to smooth out.

Cool and slice
Place in the fridge for 30 minutes to 1 hour before slicing into 10 squares.

Store
Store covered in the fridge until ready to eat. Bars will keep for up to two weeks.
