No-Bake Carrot Cake Snacks

Tools You'll Need

  • Measuring cups
  • Measuring spoons
  • Food processor or blender
  • Baking sheet
  • Mixing bowl
  • Shallow bowl or pie plate

Ingredients

  • ¾ cup unsweetened shredded coconut (set ¼ aside)
  • 6 dates, pitted
  • ¾ cup walnuts
  • ½ cup carrots, grated (Supermarkets carry pre-grated carrots for your convenience!)
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt

Directions

  1. Set aside coconut

    Place ¼ cup shredded coconut in a shallow pie plate or a baking sheet, and set aside.

  2. Blend remaining ingredients

    Place all remaining ingredients in the bowl of a blender or food processor, and blend until fully combined.

  3. Mix into balls

    Place mixture in a large mixing bowl. Using your hands, form the mixture into 1" balls.

  4. Coat in coconut

    Roll each ball in the reserved shredded coconut, coating them completely.

  5. Refrigerate

    Place the balls on a baking sheet and refrigerate for a few hours or overnight.
