Ingredients
- ½ avocado
- Zest of 1 lemon
- 2 teaspoons lemon juice, fresh squeezed
- Pinch of red pepper flakes, to taste
- 1 slice whole grain artisan bread, thickly sliced
- 1 clove garlic, cut in half
- 2 large eggs
- ½ teaspoon olive oil
- Salt and pepper to taste
Directions

Mash Avocado
In a medium-sized mixing bowl mash avocado with the back of a fork.

Add Ingredients
Add lemon zest, lemon juice, chili flakes, and season with salt and pepper to taste. Set aside.

Toast Bread
Toast bread until lightly golden.

Garlic the Bread
While the bread is still hot, gently rub the cut side of garlic onto the bread.

Top with Avocado
Top toast with avocado mixture.

Cook Eggs
Cook your eggs either poached, over easy or sunny-side up.

Place Eggs on Toast
When eggs are cooked, place the eggs over toast.

Season to Taste
Lightly drizzle with olive oil and a pinch of salt and pepper over the eggs.
