Jammie Strawberry Hand Pies

Ingredients

  • 1 package pre-made pie crusts (containing 2 crusts)
  • ½ cup strawberry preserves or your favorite preserves
  • 1 tablespoon cornstarch
  • 2 large eggs
  • 2 tablespoon milk or water
  • Granulated sugar for sprinkling

Directions

  1. Prepare baking sheet

    Line a baking sheet with parchment paper and set it aside.

  2. Mix dry ingredients

    In a small mixing bowl, mix preserves with cornstarch and set aside.

  3. Mix wet ingredients

    Add egg and milk into a small mixing bowl and beat well with a fork and set aside.

  4. Roll out crusts

    Flour a large work surface and lay out both pie crusts. Roll the pie crusts till they are approximately 11 inches across.

  5. Cut crusts into strips

    Using a ruler and a sharp knife cut off 1-inch strips all the way around each crust to form two 9-inch squares. After that, cut each square into three even strips. (You should have 6 strips total.)

  6. Prepare the pies

    Grab one strip, and spoon 1–2 tablespoons of preserves on half of it, leaving a roughly ½-inch border around the preserves. Using a pastry brush, brush a rectangle of the egg mixture around the preserves. Fold the dry end over the side with preserves, and using the tines of a fork, crimp the edges together on all sides to form the pies.

  7. Prepare remaining pies

    Repeat with the remaining five strips. Place leftover egg mixture in the fridge and save to brush on top of pastry later.

  8. Briefly refrigerate pies

    Move prepared pies to the prepared baking sheet and refrigerate for 15–20 minutes.

  9. Preheat the over

    Preheat oven to 400º after placing your pies in the fridge.

  10. Brush pies with egg mixture and sprinkle sugar

    Remove pies and egg mixture from your refrigerator and brush the pies lightly with egg mixture, sprinkling their tops with sugar.

  11. Bake pies

    Pierce the top with a fork one or two times or make a small slit with a knife to allow steam to escape while baking. Bake for 15–18 minutes or until golden brown.

  12. Cool and enjoy

    Allow pies to cool about 15 minutes before serving. Enjoy with an ice-cold glass of your favorite milk!
